First, lets talk AVOCADOS. Did you know that the avocado is a fruit and not a vegetable, and its also a part of the berry family. I love avocados for its rich and creamy texture and best of all, it’s considered a SUPERFOOD! People are afraid to eat Avocados, because they say they're high in fat, but they're high in monounsaturated fat, which is the GOOD FAT that aids in weight loss (moderation people). Avocados are also packed with 20 vitamins and minerals. So enjoy this fruit without feeling guilty.
"Avocados aid in blood and tissue regeneration, stabilize blood sugar, and are excellent for heart disorders," says Ed Bauman, Ph.D., Director of Bauman College.
Avocado Soup
2 cups of chopped cucumber, skin on and seeds included.
3 medium ripe avocados, pitted and peeled
4 cups of filtered water
1 small shallot, peeled, chopped
2 large celery stalks, roughly chopped
1/3 cup freshly squeeze lemon juice (or lime)
½ teaspoon ground coriander
½ teaspoon ground cumin
1 teaspoon of orange zest
1 large handful cilantro leaves
1 tablespoon sea salt, plus more to taste
(you can use Kosher salt, if you do not have the preferred sea salt)
Additional uses for avocados...
- Spread it on your favorite sandwich, instead of mayo
- Put it in your smoothie (YUM)
- Prepare a simple dip
- Dice it up and put it in your salad
